Salsify - Mammoth Sandwich
Salsify is sometimes called the oyster plant because of its taste after cooked. It is grown mainly for its long, tapering roots that can be peeled, cooked and served like mashed potatoes. Salsify has grasslike leaves, purple flower heads, and an edible taproot 8-12" long.
Honeyman Farms Salsify Seed Packet
Salsify is cultivated for its ornamental flowers as well as its edible root. It has a taste similar to oysters, hence its common name of "oyster plant." Young roots can be used as shoots in salads, whereas older roots are often used in soups and stews.
