Radicchio
Radicchio is an Italian leaf chicory that has been long-hailed as a medical curative for insomnia and as a blood purifier. Most similar to lettuce in appearance, the maroon-veined leaves of Radicchio have a spicy and bitter taste that tempers when cooked. Can be used in salads and risottos, it is most often prepared grilled with olive oil and light cheese in Italy.
